Molecular polarity basically means that water molecules are arranged so that they're attracted to other water molcules, and oil molecules are attracted only to oil molecules. The structures of the two molecules do not allow them to bond together or mix. Of course, there's a lot more fancy scientific language to describe density and molecular polarity, but maybe now you'll see that bottle of Italian dressing in a whole new way. -- from the book
